"To me, white chocolate is what spring is all about—the light, airy way it coats your tongue, the blank slate void of cacao mass just beckoning for spices, fruits and nuts. Easter in Chicago always seems to fall when everyone is at winter's wits end, as if one more day of donning a puffy down jacket and mittens just might put you over the edge! So with spring as an inspiration I began with lemon zest then added pink peppercorns for their floral note, cutting the white chocolate sweetness. The overall effect reminded me of my travels to Italy's Amalfi coast, where I sipped petite glasses of limoncello in the sun."
