Believe it or not, the bacon truffle was actually born before our now famous Mo's Bacon Chocolate Candy Bar! The original truffle recipe was part of our Groove Collection, an exploration of the African American influence on music history. I named the truffle "Blues" after the music genres' strong ties to the south (and the proclivity of that regional cuisine to pork). The Groove Collection included 12 truffles, a CD and a guidebook, but only one precious bacon truffle! The following year, I launched the recipe in candy bar form, making the coupling of bacon + chocolate more readily available. Now, the truffle is back, along with a dark chocolate counterpart…and 16 truffles to indulge in. AND, I am in the process of reinventing our Groove Collection, so keep an eye out this fall 2011 for its glorious return…
