This sparkler could almost be described as rich, with a deep yellow-gold color and notes of croissant dough and brioche amongst its crisp, green apple acidity. The taste is powerful and lingering, revealing fruit on the nose and unraveling into vanilla, pear, honey and toast. We selected three white chocolate truffles to highlight the wine: Ambrosia (macadamia nuts + Cointreau), Rural Blues (Anson Mills grits + burnt brown sugar + dried corn kernel), Hip Hop (Krug® Champagne + gold leaf).

"In the past, I was silenced for even suggesting a Cabernet Sauvignon was a suitable pairing with dark chocolate, though I was convinced the duo was divine. So I insisted and matched each truffle collection to one of my favorite wines, synchronizing origins and complementary flavor notes in the wine and chocolate. Louis Roederer's Brut NV is full of pear, acacia, and yeast on the nose. The palate is lively with apple, a touch of spice and a lingering impression of toast and cream; the carbonation is gentle and fine with a long finish. Brut Champagne has little dosage (added sugar), which makes it white chocolate's quintessential pair. Cocoa butter gives white chocolate a voluptuous, full texture that cuts through Champagne's acidity. Here's to an eternal life of wine + chocolate!"

Louis Roederer Champagne is produced in Reims, France, northeast of Paris and just north of the Marne River. In contrast to Champagne's elegant, festive aura, the grapes that produce this world renowned wine are grown in one of the most treacherous regions of the world— marked by chilly weather and a soil of solid chalk. However, these aspects of the unique Champagne terrior yield grapes that are high in acidity and of great finesse. Only three grapes are approved for use in sparklers made in the Champagne region of France: Pinot Noir, Pinot Meunier and Chardonnay.

Champagne and white chocolate…a match made in heaven and one of my favorites!
