"This collection was born out of a wager and struggled into existence during six months of many late nights and rising suns. It is still one of my favorites, though the name has changed from its original launch. There is no mistake that Gallo in Italian translated to a cocky rooster. Even still, this is the most odd and elusive of combinations. The shape of the Taleggio cheese and chocolate truffle was designed to further the experience.
Thoughtful of the tasting process, its unique shape guides the introduction, first offering just a little taste of the cheese and chocolate and intensifying it with each bite. Take three bites, start with a nibble from the tip and work your way down—follow the guide inside."

PIEMONTE, ITALY
Key to the Culture: A revelation of epicureans, this northwestern region has the country's richest regional cuisine, thanks to a local bounty that includes truffles, porcini mushrooms and world-famous wine trio (Barolo, Barbaresco, Barbera).
Taste...what some call the world's best wines (there are more than 200 square miles of vineyards). Wineries range from tiny, family-run gems (Massolino, in Serralungo) to world-class players (Fontanafredda).
Visit...the Castello di Venaria Reale, the former pleasure palace (dubbed Italy's Versailles) of the Savoys. It opened to visitors for the first time in 2007.
Indulge...in a stately room at Villa Tiboldi, which has spectacular views of the surrounding vineyards and a fabulous restaurant serving home-cooked local fare.
Learn...about the Slow Food Movement, which originated in Piemonte's Bra. Go for lunch or dinner at the traditional Osteria Murivecchi, owned by a renowned wine-making family.
Explore...the truffle fairs of Alba, Asti and Acqui Terme. the famous annual white truffle auction at the Castello di Grinzane is broadcast live via satallite to the U.S., Paris and Hong Kong.
Understand...that this is not Napa, i.e. sleek tasting rooms are non-existent. Vintners are eager to show off their bounty, but appointments must be made in advance.

Not for me...
|
| I am an Italian food lover and lover of cheese so my sister bought these for me awhile back and I just did not enjoy them. Mostly it was the Rooster that I didn't like but my sister REALLY liked them! So it is just a matter of taste I suppose. |

AMAZING
|
| Hands down my favorite truffle collection, because I can't pick a favorite out of the four! Each one is so flavorful and unique in its own way, with the unexpected combinations of savory ingredients with chocolate...yet the flavors are so harmonious together, you wonder why someone didn't think of it sooner. |
