"This collection was born out of a wager and struggled into existence during six months of many late nights and rising suns. It is still one of my favorites, though the name has changed from its original launch. There is no mistake that Gallo in Italian translated to a cocky rooster. Even still, this is the most odd and elusive of combinations. The shape of the Taleggio cheese and chocolate truffle was designed to further the experience.
Thoughtful of the tasting process, its unique shape guides the introduction, first offering just a little taste of the cheese and chocolate and intensifying it with each bite. Take three bites, start with a nibble from the tip and work your way down—follow the guide inside."
