A few months ago I was invited to dine at architect Phillip Johnson's legendary Glass House in celebration of Food & Wine Magazine's 30th anniversary. Beyond the breathtaking views and mesmerizing food, I happened to meet winemaker Wells Guthrie, co–owner of Copain Vineyards in California's Sonoma Valley. Wells believes that quality wines begin with the vineyard, and emphasizes "Old World" winemaking techniques with minimum intervention. The group sipped Copain wines throughout the evening, and of course my thoughts drifted immediately to chocolate. The following Monday it was decided: what else would I do but create a new gift box combining Copain Madder Lake Syrah with dark chocolate?
Copain syrah immediately envelops your palate with its pure, saturated flavors. The Old World technique allows the wine to ferment naturally, without the addition of cultured yeasts and bacteria. The wine is unfiltered, allowing the terrior to shine through, expressing the unique vineyard from which the grapes were harvested.
