"In the past, I was silenced for even suggesting a Cabernet Sauvignon was a suitable pairing with dark chocolate, though I was convinced the duo was divine. So I insisted and matched each truffle collection to one of my favorite wines, synchronizing origins and complementary flavor notes in the wine and chocolate.

The creation of the Rooster truffle was a true labor of love…one that brought me to the dawn of many a sunrise. A truffle of cheese + chocolate deserves a wine that does its essence justice. Taleggio is a soft, creamy cheese with a rosy, inedible rind, pale yellow interior and buttery, slightly salty flavor. We blend fresh taleggio into the dark chocolate ganache of our Rooster truffle which imparts a unique flavor that cannot be matched to just any wine. This Italian Barbaresco is certainly up to the task – aromas of black cherry and violet develop in the mouth and finish with a touch of anise, spice and strong tannins. Follow the guided Rooster tasting inside the box, interspersed with sips of wine. Here's to an eternal life of wine + chocolate!"

Best known for its role in the genesis of the famous Italian Barbarescos and Barolos, the Nebbiolo grape is notoriously difficult to grow, persnickety it its choice of microclimate. It thrives in the Piedmonte region of northern Italy, where the cool-ish weather cultivates Nebbiolo's ka-pow notes of leather, smoke, pepper and chocolate.
While it remains true that Barbaresco is not for everyone, the grape is a virtual celebrity in the Italian wine world, and for good reason. Produttori del Barbaresco may intimidate some with its concentrated tannins and brash character, but reserve judgement until the first chocolate bite, for this wine meets its match in the truffles of Collezione Italiano.
