"Les Fleurs du Chocolat has evolved every year since its launch; I can never resist the urge for change. While the organic blooms that inspire the names and flavors have remained the same, I often add or subtract ingredients from the mix. Two years ago I drastically altered the recipe for the purple orchid-topped bonbon. Caramelized bananas seemed to transform the flavor profile and it was agreed that it was our best truffle yet. What do you think?"

Dark chocolate + Champagne?
It might sound like a bit of an odd combination, but give this one a whirl:
Step one: Pick up a bottle of your favorite brut bubbly. We love Piper Heidsieck Rosé Sauvage—its vibrant crimson hue always impresses a crowd.
Step two: Make a rose water simple syrup and chill the syrup (and the Champagne of course) overnight. To make the rose water syrup, mix ½ cup sugar and 1 cup boiling water with 3 Tbsp rose water and stir.
Step three: Add friends. Host a Sunday brunch of bacon chocolate chip pancakes and finish off your magical morning with the Rose Vert truffle paired with a flute of this special Champagne spiked with just a dollop of the rose water syrup. Just that touch of sugar adds enough depth to the Champagne to complement the dark chocolate AND rose water in the truffle…perfection!
