What makes a restaurant great? The food, the wine, the setting? They are all important. But more often than not what sets a restaurant apart is something far less tangible. Something that makes you want to go back, time and time again. Something that makes you feel comfortable.
The Italians, probably the world's best hosts, have a word for it. They call it "convivio" and predictably it has no direct English translation. Rather, it serves to describe that love of good food and good conversation that is quintessentially Italian.
"Convivio is that moment when the host wishes everyone 'buon appetito' then spills a few drops of red wine on a fresh white table cloth to make everyone feel at home. It is this relaxed yet heartfelt welcome. The carefully prepared meal, which is a lively sequence of sensations, where the crisp alternates with the soft and yielding, the pungent with the bland, the variable with the staple, the elaborate with the simple…It is the shared glass of wine. It is about fun and laughter, about people, about sharing and giving. This is food in a life. This is La Sala."
