With the launch of her Exotic Ice Creams chic chocolatier, Katrina Markoff, unveils her latest culinary endeavor. With flavors like Wattleseed, Pandan, Red Fire and Naga hautes glaces (exotic ice cream), Markoff once again demonstrates her affinity and ease for combining bold global flavors.
The collection of ice creams includes four exotic blends.
Wattleseed honors one of the Aboriginal Australian's favorite spices, the wattleseed, which thrives in arid climates and serves as a protein source for Central Australian Aborigines. In just one little seed, the rich flavor notes of the Aboriginal wattleseed is scented with the complex flavors of cacao, coffee, hazelnut and vanilla.

In the Pandan, dark chocolate ice cream is infused with pandan leaf, dark green leaf of sublime flavor is just as common in the Asian kitchen as the vanilla bean is in the western kitchen. The versatile leaf has notes of pine nut, vanilla wafer and tree nuts that characterize thios most sensual of leaves.

Another "sinful" dark, dark chocolate ice cream is the Red Fire, combining ancho chili powder and Ceylon cinnamon for a truly devious and elevating experience. The Aztecs were the earliest cultivators of chilies and believed spicy fruits held mystical, spiritual and medicinal powers, but while they often refrained from indulging in it in order to please the gods, you are invited to cavort. As dark chocolate ice cream chills your lips, ancho and chipotle chillies impart a subtle warmth while amber cinnamon lingers.

A refreshing choice is the Naga. A must-try for the adventurous, this Haute Glace is inspired by the tribes of Northeast India creates a beautiful balance of spiciness, sweetness and color thanks to Markoff's pairing of fresh young coconut with sweet Indian curry powder which is a mélange of tumeric, ginger, cumin, clove, chillies and more. A perfect intermezzo between course.
