After church on Sundays, my mom, sister, brother and I would go to Keltch's, the Ft Wayne local pharmacy for our favorite treat, De Mett turtles. Here at Vosges Haut-Chocolat, we believe in letting the indigenous ingredients of the land speak for themselves. We let every spice, herb, flower and root we choose shine brightly through the finest chocolate, telling a story of unique flavors, cultures and folklore. So when we read an article featuring Sally Harper, an organic pecan farm owner in Las Cruces, New Mexico, we knew that her little gems were destined for our chocolate-caramel-creations.

Since she purchased the Western Schley pecan orchard in 1986, Sally has continued to forge new territory in organic agriculture. Over ten years ago she chose to stop burning her annual prunings to cut back on air pollution. As an alternative, Sally shreds them after harvest and re-incorporates them back into the soil in a process known as discing. She conserves water through laser-leveling of the orchard floors and cinder block dissipaters. Matter of fact, conservation and earth-conscious thinking prevails in practically every aspect of Sally's business, and she continues to search for new ways to preserve the soil through responsible farming practices. As Sally puts it, "Our welfare in the future pretty much depends on the health of our dirt. That's just about as straight-forward as you can get."
