Manchego and Cherry Chocolate Bar

A curious pairing of chocolate + cheese. The first chocolate bar in a soon to be launched new cheese and chocolate series. Both cheese and chocolate undergo the process of fermentation, which is essential in yielding their complex flavors. Katrina has combined D.O.P. 12-month aged Manchego cheese with tart, dried Montmorency cherries in our proprietary bittersweet chocolate. A worthy surprise.

Our haut-chocolat is infused with a healing sound frequency to raise your vibe.

BREATHE
Close your eyes. Take three deep, ujjayi breaths. Listen to the space between thought and prepare your palate to experience chocolate.

SEE
Describe what you see. What is the shape, color, sheen and texture?

TOUCH
Run your finger against the chocolate, noticing its texture and releasing the aromatics.

SMELL
Bring the chocolate to your nose. Close your eyes, cup your hand around the chocolate and inhale deeply.

TASTE
Enjoy your haut-chocolat in two bites. In the first bite, you are just getting to know the haut-chocolat, and in the second, you delve deeper, searching out the aromas and nuances. You become immersed in the experience of the chocolate and the sensations. After you’ve eaten the haut-chocolat, take a breath and taste the air. The aroma should have a long, lingering finish that is layered with perfumed notes.


Living in Paris, Katrina learned the Parisian ritual of purchasing chocolate and pastry daily. We use exotic and ephemeral ingredients for all our products, including the Vosges Manchego and Cherry Chocolate Bar.

"Back in my Vanderbilt days as a Chemistry major, I spent many hours a day in the laboratory, where I donned Poindexter goggles and tinkered with combustion as tinctures warmed in Pyrex beakers. As part of my ""general"" curriculum, I enrolled in the required science classes, joining my classmates each week in small lecture halls where we learned about mitochondria and reaction mechanisms and genetic recombination. It was there that I came across the process of fermentation. Now applying this to the Curious contemplation of Cheese + Chocolate"
