Thanks to an ancestral land grant from Napoleon, the Clouet family possesses vineyards situated on the best middle slopes of the Grand Crus' Bouzy and Ambonnay. Bouzy is a village with chalky soils that permeate between Grand Cru and Premier Cru grape fields, where Pinot Noir speaks with great eloquence and contends with only Burgundy in intensity. The wines are cellared under the family's 17th century village house built by their ancestor, a printer to Louis XV's royal court at Versailles. The Clouet style of rich, concentrated, pretty wines results from making Champagne from 100% Pinot Noir. Jean-François is the winemaker and is known for his fanatical devotion to quality.

Each Vosges Haut-Chocolat collection is packed fresh on your day of shipment. Truffle collections are shipped from frozen, then thaw while in transit, and are perfectly safe to refreeze upon arrival. A How to Care Card and enjoy your haut-chocolat at peak perfection is included in each shipment with details on your collection. Please rest assured that once thawed, chocolates will be fresh for up to 7 days before needing to be placed in the freezer.

The Tasting Experience:

BREATHE
Close your eyes and take three deep breaths in and out through the nose, to the count of 4 on the inhale and a 4 on the exhale. Notice how the breath flows in your nose cool and then warm as it flows out in the exhale.

READ
Read the story of the chocolate you are about to taste. This allows you to pair a picture in your imagination to conjure a vision of taste and journey.

SEE
See the chocolate. See the wine. Observe it as if for the first time… Examine the curves, the color, the movement; have a sense of its weight and temperature.

TOUCH
Touch the chocolate. Notice the shine on the surface and topping, if one exists. While reading its description and seeing its appearance, how does the chocolate feel in your hand? How do you think it will taste?

SMELL
Close your eyes again, smell the chocolate. What aromas arise?

TASTE
Slowly place the chocolate against your lips, feeling it. Now bite the chocolate in half and notice the sound it makes as it breaks. Taste both the wine and the chocolate on their own first. Now, taste the chocolate and wine together.

FINISH
Reflect on the finish in your mouth by sipping air through your nose and chewing on it in the mouth.

    New Mexican Pecan

    Sally Harper, a paragon who spread the gospel of organic farming methods bought a young pecan farm in the Mesilla Valley in southern New Mexico with her husband Wilmer in 1986. In the early years, the family worked the farm with one old tractor and a lot of manual labor. As they became more proficient, they found that chemical fertilizers and pesticides were not necessary to produce a good pecan crop. In 1994, the orchard was certified organic, one of only two such pecan orchards in New Mexico at the time. As demand for organic pecans grew, Sally began working with other like-minded pecan growers in the valley to encourage them to transition their pecan orchards to organic. The family farm is now into its second generation as the Harper children have assumed responsibility for the daily farm and business operations.
