NEW! From LAB: Katrina Markoff Pure Plant collection. The Whole Cacao Pod bar is made using Baba de Cacao, the sweet pulp that suspends the beans, and the cacao pod. Here, it has been freeze-dried and gives the bar its parfum of lychee and tropical notes.

LAB: Katrina Markoff is where we explore the boundaries of my imagination. It is a place where we dream up how to push the possibilities of the magical and mystical ceremonial cacao in ways that challenge how it has been used for thousands of years.   

For Pure Plant we wanted to consider the idea of simplicity.  
Each bar was a challenge to be thoughtful, selective, and limit how many ingredients we used, while still creating complex parfums that delight and surprise the palate. Wanting to also highlight the health benefits of the Cacao, we chose to use unrefined sweeteners and alternatives to dairy and we infused each bar with healing vibrations during the cooling process.   
We also sought to understand how we could utilize the parts of the Cacao that are not typically used to make chocolate bars. Shouldn’t we try to use the whole pod and celebrate its natural perfection? How could we use the Baba, which surrounds the Cacao beans and is typically discarded, to flavor the chocolate in a unique way?   How could we use the Cacao pods’ fiber to enhance the bars’ health benefits? 
We hope this LAB: Katrina Markoff offering introduces you to chocolate in a new way and that these four bars allow you to experience Cacao as close to how nature intended it to be discovered: simply. 

Pairing:  Take a bite of a thin slice of pineapple and then a bite of the bar to bring out the tropical notes.

Living in Paris, Katrina learned the Parisian ritual of purchasing chocolate and pastry daily. We use exotic and ephemeral ingredients for all our products.
