The creation of the Rooster truffle was a true labor of love…one that brought me to the dawn of many a sunrise. A truffle of cheese + chocolate deserves a wine that does its essence justice. Taleggio is a soft, creamy cheese with a rosy, inedible rind, pale yellow interior and buttery, slightly salty flavor. We blend fresh taleggio into the dark chocolate ganache of our Rooster truffle which imparts a unique flavor that cannot be matched to just any wine. This Italian Barbaresco is certainly up to the task – aromas of black cherry and violet develop in the mouth and finish with a touch of anise, spice and strong tannins. Follow the guided Rooster tasting inside the box, interspersed with sips of wine. Here's to an eternal life of wine + chocolate!"

The Barbera grape thrives in the Piedmonte region of Northern Italy, most famously in the regions of Alba and Asti that border DOC Barbaresco. Unlike its Nebbiolo neighbor, Barbera tends to develop softer tannins, highter acid levels and fruit character similar to Cabernet — blackberry, cassis, tobacco and cedar. When very young, the wine might exhibit cherry and lighter red fruit notes.
