A Chocolate Cupping Party!
No, this is not an ancient torture ritual or an acupressure spa treatment. "Cupping" your chocolate is yet another way taste. Liquid chocolate coats your palate in a way that solid chocolate does not, allowing you to better perceive and discern the component flavors. It is a great way to begin your sensory journey, a means of developing your tasting know-how. You can "cup" any chocolate bar—try it with our Sensory Collection, single origin candy bars or any of our -First, melt. Yes, you can melt chocolate in the microwave (gasp!), here's how:
• Bring about 1 cup of whole milk or water to a boil on your stovetop (you will need about 2 oz. of liquid for each chocolate bar you are cupping) • While the liquid boils, place 2 oz. or so of each flavor of candy bar, chopped, into their own microwave safe cups.
• At 50% power, zap them for about 1 ½ - 2 ½ minutes.
• Stir each with a rubber spatula until smooth, use a separate spatula for each flavor to avoid cross-contamination. Zap 10-15 seconds more as needed, still at 50% power.
• Add 2 oz. hot milk or hot water to each cup and whisk until smooth.
• Sip and compare!
