Flying Chocolate Pig

"This whimsical chocolate creation came about while I was chatting with my friend Mo, who was part of the inspiration behind our bacon + chocolate bar. I wanted to create a fun party favor for his upcoming nuptials with chocolate of course. Something unexpected for the guests; a parting gift to bring a smile to their faces...a flying pig made of bacon and chocolate! I loved the concept and design so much that I decided to mix up another batch of flying pigs for all our bacon fans to enjoy."

15 medium-sized Medjool dates
3 chorizo sausages, casing removed
1 Mo's Bacon Bar (8 squares)
8 pieces Nueskes Bacon
1 batch of Spicy Oaxacan Red Sauce
Cilantro, for serving

Cut a date on one side lengthwise, remove pit. Stuff with chorizo and place ¼ of a bacon bar square in the center of the chorizo. Fold chorizo around chocolate.

Wrap in half a piece of smoked Nueskes bacon. Sear bacon-wrapped dates in pan until crispy. Set aside. Pour red sauce half-way up the sides of a baking sheet with 1-inch side walls and transfer dates to the baking sheet. Space dates 1 inch apart. Bake in sauce for 25 minutes at 350ºF. Serve in sauce, garnish with cilantro and bacon bar shavings.

Great pigs    
Vosges' joyful "Flying Pigs" are sinfully luscious. With a careful balance of sweet and salty, they are an eagerly awaited guest at any occasion, including breakfast. Offering Vosges "Flying Pigs" as gifts prolongs the pleasure, while experiencing the reactions. "I must have more!", "Amazing!", "Better than anything I can imagine.", "How cute!", were a few breathless words that spilled out with that first bite. One must give up any ideas of rescue from their addiction.

Not just yummy but...    
I got this for my brother, who is a bacon lover. The idea behind the shaping of this treat is not lost. It is kitschy, but more importantly, delicious. More things should be make from perfect chocolate and bacon!

The Flying Dark Pig    
My husband and I adore bacon and dark Chocolate so this was a simple slide into the mud, actually other dark chocolate, to eat your divine dark chocolate piggie. I wish I could order several flying pigs but do understand it's only fair that we not become piglets by buying as many as we can and saving them in the freezer for later in the year, although it's sure tempting to do so. If you haven't tried this piglet DO AND FAST, BEFORE THEY RUN OUT BECAUSE THEY ARE MORE THAN JUST THIER CUTE SHAPE...THEY ARE DIVINE.
