Exotic Chocolate Chips / Red Fire Exotic Chocolate Chips

Folklore credits an errant apprentice to the culinary genius Auguste Escoffier for pouring hot cream into a bowl of chocolate. Escoffier worked the mixture into small lopsided balls, dusted them with cocoa and was struck by the resemblance to savory French truffles. Voila!

Originally, cocoa beans were crushed and mixed with vanilla, cornmeal and chillies in a frothed drink. When Spanish conquistadors brought the beans back to Spain, new recipes were created by removing the spices and adding sugar, and mainstream chocolate consumption was born. Vosges takes chocolate back to its roots with the Red Fire bar, blending dark chocolate with ancho and chipotle chili peppers and Ceylon cinnamon.

Red Fire Martini

Ingredients:
3 ounces vanilla vodka
2 ounces chocolate liqueur (creme de cacao)
1/2 ounce cinnamon schnapps liqueur
1/2 teaspoon chili powder
1 teaspoon sweetened cocoa powder
1 Red Fire Bar

Directions:
Mix all ingredients in a shaker over plenty of ice. Shake vigorously. Strain into a martini glass rimmed in a mixture of cocoa powder and chili powder. (To do this easily, use a wedge of lime to wet the rim of the martini glass before you dip it in the cocoa powder/chili powder mixture. You can also rim the glass in Aztec Elixir Cocoa!) Garnish with coarsely chopped pieces of Red Fire bar (small enough so that they float on top of the martini). A single skewered chili pepper would also make a great garnish!
