Dr. Li

Dr. William Li is a physician, scientist, and New York Times bestselling author whose work to find common denominators of health and disease has impacted more than 50 million lives.  He is a world-renowned expert in angiogenesis, the process the body uses to grow its circulation, and the basis for a renaissance in biomedical research that has led to new treatments for cancer, diabetes, and vision loss.

Dr. Li’s passion for discovering and harnessing the power of food began with his travels to Italy and Greece more than thirty years ago. While exploring new ingredients in the Mediterranean he began researching how each one influenced both culture and health. Inspired by culinary traditions and modern interpretations using time-honored foods, Dr. Li took these ideas back in the laboratory where he began studying food in the same systems used for biotechnology, specifically food’s impact on our health defense systems, and its ability to combat and prevent disease. This led to the discovery of angiogenesis foods which he presented at TED in 2010 in his widely viewed talk “Can we eat to starve cancer?”. Dr. Li’s breakthrough work has upended conventional thinking about nutrition by focusing on how adding foods, rather than removing them, can enhance our health.

A pioneer in food as medicine, Dr. Li has discovered more than two hundred foods that activate the body’s hardwired health defense systems: angiogenesis, regeneration, microbiome, DNA protection and immunity.  This work led him to write his New York Times bestselling book Eat to Beat Disease: The New Science of How Your Body Can Heal Itself, which has been translated into 21 languages.  Through his partnership with Katrina Markoff, Dr. Li brings to life the alchemy made possible when cutting edge science converges with unparalleled creativity and genius in the world of chocolate.

Our five new bars in our Pure Plant collection are the culmination of more than a decade of friendship between Katrina and scientist, Dr. William Li. Through a chance meeting at the TED Conference was born a kinship forged in food, travel and curiosity. Over the course of the ten years, they have developed a vocabulary informed by their mutual science background, global adventures and their palates. Of the partnership, Dr. Li notes, “Vosges is known for revealing the hidden dimensions of chocolate by combining cacao with unexpected flavors and ingredients.
