Bomba Bite Crispy Peanut Butter Cookies

Follow this easy, kid-friendly Easter cookie recipe using our Dreamy Peanut Butter Bombas atop chocolate peanut butter crisps. Fun fact, these Bomba Bites are all in the family, the packages are illustrated by Katrina’s 8 year old son!

These chocolatey, crispy bites are a mouthful of flavor and fun.

Yield: 2 dozen

Cook Time: 20 min Total Time: 25 min

Ingredients:

½ cup butter or coconut oil*
1 cup granulated white sugar or coconut sugar
½ cup peanut butter, my favorite is Maranatha
½ cup cocoa powder
¼ teaspoon salt
1 1/2 cups puffed brown rice, Barbara’s is our fav
1 Pack Vosges Dreamy Peanut Butter Bomba Bites

Directions:

Line a cookie sheet with parchment paper and set aside. In a saucepan over medium heat, melt together butter and sugar. If using butter, mix until the butter is lightly browned. Take off the heat and mix in peanut butter, cocoa powder, and salt until well combined. Next, fold in puffed brown rice. Spread on a parchment lined baking sheet and place a Peanut Butter Bomba bite on top. Let the cookies cool until they’ve formed a solid base then cut into your favorite shapes. Store in the refrigerator. Keeps for 2 weeks.

*The coconut oil will set up firmer than the butter.
