Candied Bacon and Chocolate

Who doesn’t love the sweet, salty, fatty, crisp goodness of candied bacon?! An unambitious quest with a delightfully succulent outcome. Treat yourself, your modern mom, outcast dad, doctor, cyclist, loot runner, yogi, lost, found, fabulously floating alike - wooo all the people in your life with this dipping treat!

Yield: 6 servings, Prep Time: 10 minutes, Cook Time: 35 minutes, Total Time: 45 minutes

Ingredients

1 pound thick cut bacon

1 tablespoon fresh ground black pepper

1 cup light brown sugar

Directions

Preheat oven to 375°F. Place a wire rack on a foil lined baking sheet. Arrange the bacon on the wire rack and sprinkle with the black pepper. Lightly pat the brown sugar on top of the bacon to create a thin layer. Transfer the baking sheet to the oven and bake for 25 minutes or until the brown sugar has melted and the bacon is crisp. Remove from the oven and allow to cool for 10 minutes. Using tongs, transfer the bacon to a parchment lined baking sheet and allow to cool to room temperature. Store in an airtight container for up to 3 days at room temperature. Serve with Simply Divine Chocolate Fudge (recipe below) or Cheese and Chocolate Bars

Simply Divine Chocolate Fudge 

2 oz, chocolate, 55% cacao 

1 cup heavy cream

2 cups dutched cocoa powder

1 cup butter, unsalted, Kerrygold ideally

1/2 cup agave syrup  

Directions

Combine the all the lovely ingredients in a small saucepan over medium heat and cook, stirring, until the butter melts and everything is combined, a few minutes. Transfer to a mason jar and store in the refrigerator. It will harden as it cools so when ready to use, simply reheat in a saucepan over medium-low heat.
