The sweet flavor of white peach is balanced nicely with the cherry stem syrup, which simply uses the stems of fresh cherries to convey a tanic cherry flavor. Momoko White Peach Cocktail or Mocktail
Yield: 6 glasses, Prep Time: 5 minutes, Cook Time: 10 minutes, Total Time: 15 minutes
Ingredients:
2 medium very ripe unpeeled white peaches, halved and pitted
3 tablespoons lemon juice (or try another super-food like baobab, camu camu or hibiscus)
3 tablespoons cherry stem syrup
1 750 ml bottle chilled Prosecco, club soda or Choya Umeshu (a Japanese plum wine)
garnish of micro mint, herbs or peach slices

Directions:
Puree peaches, lemon juice and cherry stem syrup in blender on the highest setting for 2 minutes. Taste; add more syrup or lemon juice as desired. Pour 2 tablespoons puree into each of 6 stemware. Top with Prosecco or Club Soda and bathe with skewered truffle and garnish of choice.
Cherry Stem Syrup
Ingredients
1 cup sugar
1 cup water
1 tablespoon cherry stems
Directions:
In a small saucepan boil all ingredients together until the sugar is completely dissolved. Cool to room temperature. Strain out stems and chill before use. Lasts for a week in the refrigerator. Great for cocktails when you want a dainty almond cherry note.
