The village of Saint-Bris-le-Vineux sits upon extraordinary medieval cellars, true underground labyrinths, which are certainly the most impressive in Burgundy. Yet this is only one of the many unique gems of the village, as an unexpected grape variety is cultivated here, Sauvignon Blanc. Due to the rareness, this region is deemed an Appellation d’Origine Contrôlée, making the Sauvignon a one of a kind in Burgundy and thus AOC in the Saint-Bris village. Saint-Bris was awarded its village appellation in 2003 and refers only to white wines made from Sauvignon grapes. Saint-Bris is a rare beauty in Burgundy.

The Tasting Experience

Close your eyes and take three deep breaths in and out through the nose, to the count of 4 on the inhale and a 4 on the exhale. Notice how the breath flows in your nose cool and then warm as it flows out in the exhale.

Read the story of the chocolate you are about to taste. This allows you to pair 
a picture in your imagination to conjure a vision of taste and journey.

See the chocolate. See the wine. Observe it as if for the first time… Examine the curves, the color, the movement; have a sense of its weight and temperature.

Touch the chocolate. Notice the shine on the surface and topping, if one exists. While reading its description and seeing its appearance, how does the chocolate feel in your hand? How do you think it will taste?

Close your eyes again, smell the chocolate. What aromas arise?

Slowly place the chocolate against your lips, feeling it. Now bite the chocolate in half and notice the sound it makes as it breaks. Taste both the wine and the chocolate on their own first. Now, taste the chocolate and wine together.

Reflect on the finish in your mouth by sipping air through your nose and chewing on it in the mouth.

    Our proprietary chocolate is crafted specifically to support the ingredients we infuse with it to achieve a taste experience matching the storytelling. Our 45% cacao deep milk chocolate is a roasted cacao with a dense caramel profile that is achieved through the caramelization of roller-dried whole milk during the conching process.

    At the heart of our mission is creating luxury chocolate collections with responsibility to the environment that sustains our earth. We have been sourcing Fair Trade or Rainforest Alliance-certified cacao for over 15 years. We are powered by 100% renewable energy and abide by a green purchasing of procuring only post-consumer recycled board and biodegradable materials. Our kitchen exclusively uses Organic cream and sugar.
